Squash with French Beans in Coconut Milk

This dish is called “Ginataang Kalabasa” in Filipino language.

Ginataang Kalabasa is one of my favorite Filipino dishes. For one, it’s healthy because it consists of vegetables and shrimp. There are variations of this dish. Some people use meat as substitute to shrimp but for this one, I opted to use shrimp. Personally, whenever I eat this dish, it makes me feel full yet there’s no feeling of heaviness in my stomach. Usually eaten as lunch with a cup (or two cups!) of rice. Hope you enjoy cooking this humble dish ☺️

Preparation time is 20 minutes and cooking time is 40 minutes.
