Ground Beef Enchilada
An easy to put together, relatively healthy meal. I like spicy so if you don't just omit cayenne and jalapeno.

In large dutch oven, heat oil. Add garlic and jalapeno. Saute 1 minute over medium heat.

Add in the peppers, scallions and spices except salt. Stir and cook several minutes.

Next mix in olives and beans. Cook another 3-4 minutes. Then remove from pan.

Salt the ground beef and add to pot. Break meat up into crumbles and cook until no longer pink.

Add vegetables back in with beef. Mix. Turn off heat. Taste and check to see if spice levels need to be adjusted.

Preheat oven to 350 degrees. In a 5x7 pan put a tortilla shell into pan. Fill the middle of tortilla with beef mixture. Roll up and push to end of pan. Continue with other tortillas. I use Ole Wellness tortillas. Cuts carbs and calories.

Once 6 are rolled, pour enchilada sauce over tortillas. Spread and top with cheese. Bake for 25 minutes. Serve with sour cream if you wish. Enjoy.
