Yam Swirl Bread

In a bowl, pour in 1cup warm water, add yeast, salt, sugar, oil and flour. Mix everything together to form a soft dough. Cover and allow it to rises until it doubles its size. Meanwhile, make the filling.

Chop your scotch bonnets and onion. Add in cooked yam, curry, black pepper, coriander, thyme, salt and maggi. Chop/pound them together. Grease your hand with oil and mold the yam mixture into small balls(8 pieces or more).

When the dough rises, deflate the air and divide into 8 pieces. On a floured surface, take one piece and roll it out. Take one yam ball and roll it into a cylindrical shape, place at the center of the dough and apply water to the edges and seal.

Roll it gently to increase the length. Lightly brush all over the sealed edges with water and roll it into a swirl like shape. Flatten it a bit and place in a tray.

Repeat this process for the remaining balls and arrange in a baking tray. Leave to rise for 10-15mins until slightly puffed up. Apply your egg wash and sprinkle some chilli flakes.

Sprinkle some sesame seeds and bakefor 20 -40mins on medium temperature until golden brown. Serve and enjoy.
