Preheat the oven to Gas Mark 5.
Place the large raw rectangular Pork Joint in the Roasting Tin and then drizzle the Vegetable Oil over the top and then sprinkle Table Salt etc. over the top and then sprinkle the Sage and Onion Pork Seasoning over the top. Add Kitchen Foil over the top and then roast for 2 hours

Remove the Kitchen Foil and then baste the Pork Joint - continue too roast without the Kitchen Foil over the top for 30 minutes and then baste the Pork Joint again and then roast for a final 30 minutes

Allow to rest with Kitchen Foil over the top and rest for a minimum of 30 minutes and then remove the string and then carve the cooked Pork Joint
