Bengali cuisine involves lot of peels of vegetables being used to cook. Both healthy and tasty I chose Raw Banana peel or Kanchkola Khosha.
Steps

Boil the Kanchkola and drain. Gradually peel the skin and chop lengthwise fine, set aside the boiled Raw Banana for making Kofta

Chop the potatoes and pumpkin fine

In a wok heat oil and add pumpkin chopped and fry for 2 mins, set aside
- 4
To the same oil add nigella seeds and add chopped potatoes and stir for 2 mins, add chopped Kanchkola and stir for 2 mins. Add grated coconut and stir for 2-3 mins

Add turmeric powder, salt and mix well. Cook for 2 mins

Sprinkle some water as you stir. Add mustard seed paste and mix well, cook for 3-4 mins

Add the fried pumpkin and stir well for 1 mins

Mix everything well and set aside

Serve and enjoy 😊
