Steps

Peel fresh peel of ridge gourd. Cut it into small pieces. Next heat a kadhai with oil. Splutter coriander seeds, cumin seeds. Add garlic cloves, dry red chillies and hing. Saute for a minute.

Next add in the chopped ridge gourd. Put salt to taste. Add turmeric powder. Mix well. Saute for some time.

Next add water just covering the ridge gourd peel. Cover and cook till softened. Next add tamarind. Mix well and let all these be in slow heat for a minute or two.
Then switch the heat off and let the mixture come to room temperature. - 4
Grind into a smooth chutney. Add little little water as an when needed.
Now transfer the chutney into a dish.
Next prepare for tadka.
Heat oil. Splutter mustard seeds, cumin seeds. Add gota urad dal, dry red chillies and curry leaves. Mix. - 5
Pour the tadka into the chutney.
Give a nice gentle mix. - 6
Serve with hot steaming rice. It's spicy.tangy... yummy..
