Authentic Minced Pork & Rice Lǔ Ròu Fàn (Taiwanese Style Miso Pork)

I made this recipe to imitate Taiwanese food stall style Lǔ Ròu Fàn (Minced Pork and Rice)
I loved eating this so I decided to try making this on my own!
This became a hit in all my neighbors homes too!
It's delicious on rice, udon noodles, of even ramen.
The oily texture of this dish is it's feature, so if you have the supermarket mince the meat for you, it might be a little dry. If you can, try to do it yourself. That way it turns out to be like real miso pork!

Grind the pork belly roughly with a meat grinder (If you don't have a meat grinder, have it ground up roughly at the supermarket.)

Finely chop the Taiwanese style pickled cucumbers.

Add the oil into a frying pan, then add in the fried shallots, then stir fry until aromatic.

Add in the minced pork belly and stir fry.

Next add in the finely chopped cucumbers and stir fry.

Add in all of the seasonings, bring it to a boil and then cook on a low heat setting for a while.

Once it's cooked for about 40~50 minutes, the water has evaporated slightly, and it looks a bit glossy and shiny, it's done!

All you need to do is put it on some rice and your authentic lǔ ròu fàn (minced pork bowl) is ready.

You can put it on top of some boiled veggies too. v(≧ )v.

It's also great with thin udon! You just slurp it up and you won't be able to stop.

These are the fried shallots that I used and they are sold in Japan! You can get these at a Chinese supermarket, the Chinese section of your supermarket or online!

Fried shallots are finely chopped red onions fried in oil. The are called [Red onion flakes] and I've seen them used in Taiwanese cooking.
