Teriyaki-style Quick-Braised Chicken and Shiitake Mushrooms with Vinegar

I got ahold of very meaty thick shiitake mushrooms and decided to cook them with chicken thighs. Their combination is great, isn't it? As I wanted to eat this dish with rice I had this dish sweet and savoury flavoured and I also added vinegar to make it lighter.

Cooking Instructions

Cut the chicken thigh meat into bite-sized pieces. Discard the stems of the shiitake mushrooms and cut in half.

Heat the vegetable oil in a pan over a high heat and fry the chicken with the skin side down. After both sides are nicely browned add the shiitake mushrooms and fry.

Add the ☆ sauce ingredients and shake the pan gently. Simmer over a medium heat for about 3 minutes and serve.
