Red Curry with Fresh Bamboo Shoots

Slice the boiled bamboo shoots into bite-sized pieces.

Heat a little coconut milk in a pot over medium heat. Add the red curry paste and stir-fry until the coconut milk is absorbed and the paste is fragrant. Gradually add more coconut milk, stirring until the oil separates and the curry is aromatic. Add the pork and cook until done.

Pour in the water and bring to a boil. Add the bamboo shoots and pork blood cube (if using).

Season with MSG, seasoning powder, and sugar. Let it boil for a few minutes, then taste and adjust the seasoning as desired. Add the kaffir lime leaves, Thai basil leaves, and red chili peppers. Cook for a short while, then turn off the heat.

Serve in a bowl. Enjoy with steamed jasmine rice or rice noodles, as you prefer.
