A dish made from leftover ingredients in the fridge. I ran out of hủ tiếu noodles, so I used leftover rice noodles instead. The broth is sweet and fragrant, very delicious.

A dish made from leftover ingredients in the fridge. I ran out of hủ tiếu noodles, so I used leftover rice noodles instead. The broth is sweet and fragrant, very delicious.

Lightly grill the squid, then tear it into small pieces. Pound the squid tentacles lightly to soften them, then cook with salt and rock sugar to make the broth. Blanch the rice noodles in boiling water. Chop the green onions.

When the broth boils, add the ground meat, cover, and let it sit for about 10 minutes to allow the squid to release its sweetness, then bring it back to a boil. Serve the rice noodles in a bowl, pour the broth over with the dried squid and ground meat, sprinkle with green onions, and enjoy.
