Ingredients

2 ½ to 3½ hours
15 people
  1. 2 (1 oz)packages taco seasoning mix
  2. 1 lbhamburger (ground)
  3. 1 lbsausage (ground)
  4. 1onion (finely diced)
  5. 1 tbssalt
  6. 1 tbscumin
  7. 6 cupsrice
  8. 15sweet bell peppers
  9. 1/2 cupbutter
  10. 1 cupcherry tomatoes (sliced in half)

Cooking Instructions

    Finely dice one onion set aside.

    Boil Rice until done and set aside.

  3. 3

    Combine hamburger and sausage in a skillet and cook. Chop it into a fine consistency as you cook. Add butter, taco seasoning, onion, cumin, tomatoes, and salt to your skillet and mix well.

    With a larger pot, combine your rice and taco/meat mixture.

    Cut the tops off of peppers. With a small spoon, remove any inner pepper seeds to make room for stuffing.

    Stuff peppers full of the meat mixture and place in a casserole pan or cookie sheet and cover with tin foil. Bake for one hour at 450°

    Remove tinfoil and bake an additional hour and a half to two hours or until peppers have softened and become wrinkled.

    Remove and serve hot. Add sour cream, cheese, chives or salsa and serve
