Kanafeh or Kunafa or Knafeh is a very famous Middle Eastern Dessert loved by many. I have made it from the thin variety of Vermicelli available in my City here instead of the original one. The process is very simple and involves only a few ingredients. This Sugar soaked Vermicelli and Cream Dessert is the perfect aftermeal Dessert idea on any day for your families and friends. Easy to whip up within no time at all. You can actually vouch for it's appealing beauty and serve them to your guests for that awesome Dessert experience.
Kanafeh is made with thin noodle like pastry or alternatively even Semolina dough, soaked in sweet sugar syrup and layered with Cream Cheese, Cream, Mozzarella Cheese and nuts depending upon the regions. Whipped Cream can also be used. This makes it an ideal choice for any party too.

For preparing the kunafa crust, break the strands of kunafa dough or the vermicelli with your hands. Add melted butter and mix well. Now divide the quantity of the vermicelli into two parts. You can also make Kunafa dough (strands) at home, but it takes time.
Keep a baking pan lined with parchment paper and greased with butter ready to bake. - 2
Preheat oven to 180°C. We shall start with preparing sugar syrup now. In a saucepan add sugar and water and boil until it becomes sticky and comes to syrup consistency. It should have a two string consistency. Ensure that you do this on a low heat.

Place the vermicelli in the oven and bake for about 30 to 40 minutes or until the top turns brown and crispy.
Once the vermicelli is baked, allow it cool. - 4
For the pudding, heat a cup of milk with condensed milk and cream cheese both. Heat it just until well combined and cool. You can add some cottage cheese too. It's optional.

Add one half of the kunafa pastry or the baked vermicelli to the bottom and press well in a baking pan.
Pour the milk pudding and spread evenly. Sprinkle the shredded mozzarella cheese above the pudding. - 6
Next add the other half of the kunafa pastry on top and press down gently. Preheat the oven to 180° C again. Bake for about 5-6 minutes. Pour the sugar syrup while it's still hot.

Take a knife and run through the sides. Place a plate on top and flip gently. Pour the remaining sugar syrup over the other side of the kunafa as well and now garnish with chopped pistachios, rose petals and saffron strands for an awesome experience with the lovely and the most celebrated Dessert from the Middle East.
