Ingredients

  1. Dashi stock
  2. 2 1/2 cupWater
  3. 1 tspSalt
  4. 1(If using soy sauce or miso...)
  5. 1/2 tbspChicken stock granules
  6. 1Kombu for dashi stock
  7. 1/2 tspBonito dashi stock (granules)
  8. 2 tbspSake
  9. 2 tbspMirin
  10. 1 tbspGrated garlic
  11. Chicken meatballs
  12. 200 gramsMinced chicken
  13. 1/2 tspSalt
  14. 1/4 tspSugar
  15. 1 dashPepper
  16. 2 tbspWater
  17. 1/4Eggs
  18. 2 tspKatakuriko
  19. 2Sliced carrots
  20. 5 cmJapanese leek
  21. Additions:
  22. 4leaves Thinly sliced pork belly
  23. 5big leaves Napa cabbage
  24. 1Japanese leek
  25. 200 gramsMushrooms (enoki, maitake, shiitake)
  26. 5 cmCarrot

Cooking Instructions

    Knead those chicken meatball ingredients! Use a food processor if you have one. Finely chop the leek and carrot.

    When you're done mixing, it should look like this.

    Put the dashi stock ingredients into an earthenware pot and bring to a boil. Form small meatballs, drop into the pot, and let simmer.

    Put the other ingredients into the pot. Anything is fine!

  5. 5

    Once everything is nice and soft, it's time to eat I recommend using the leftovers to make ramen noodles.
