I wanted to eat rich miso hot pot so I used hacho miso. If you add udon noodles to the broth at the end, it will also be delicious.

Ingredients

3 servings
  1. 800 mlDashi stock broth
  2. 4 tbsp★ Hatcho miso (or red miso)
  3. 2 cloveGarlic
  4. 1knob ★ Ginger
  5. 2 tbsp★ Sake
  6. 2 tbspMirin
  7. 2Chicken thigh
  8. 1/8Napa cabbage
  9. 1/2 bagChrysanthemum greens
  10. 1/2 bunchShimeji mushrooms
  11. 1pack Enoki mushrooms
  12. 1Japanese leek
  13. 1/4Daikon radish, medium
  14. 1/2Carrot, medium
  15. 1 blockTofu
  16. 1pack Shirataki noodles
  17. 2servings Udon noodles

Cooking Instructions

  1. 1

    Grate the garlic and ginger. Cut all the ingredients into bite-size pieces.

  2. 2

    Boil dashi in a clay hot pot and add ★ marked ingredients. Dissolve the miso well. Add other ingredients starting with ones that take longer to cook.

    Cover with a lid and cook over medium heat. Skim off scum and cook until all ingredients are cooked through.
