I really hated omena until one day my sister inlaw cooked and gave me to eat. I realised it was not bitter as it always tasted. The key of cooking omena that is not bitter is properly washing them with very hot water. You can even do this up to six times or your likings until the omena is left fresh. After this, you can run it through cold water as per your likings. Omena requires a lot of oil.

Wash the Omena thoroughly. Run it through water about 3 upto six times the rinse it with cold water

After that drain your water and heat up your oil.You should then be able to deep fry your omena until crunchy in about 5 minutes.

Set the omena aside and start frying your onions,tomatoes and spices of your choice for about 5 minutes

Then put the omena that you set aside into the mixture and stire for 3 minutes

Serve and enjoy with hot ugali and avocado
