In a bowl, mix all the filling ingredients together.

Lay the spring roll wrappers on a flat surface and lightly brush the edges with water.

Place a tablespoon of filling near the bottom center of each wrapper and fold it up like an envelope.

Heat oil in a pot or skillet and fry the spring rolls until golden brown. Serve immediately.
