Ingredients

1Boursin cheese block
2 cupsuncooked orzo
4 clovesgrated garlic
1/2 cupsun dried tomatoes, chopped
1/2 cupKalamata olives, chopped
2 tbspolive oil
4 cupsvegetable stock
1/2 tspred pepper flakes
1/2 tspdried oregano
1/2 tspdried thyme
2 cupsspinach
1/2 cupParmesan cheese
1/2 cupheavy cream
Optional: shredded chicken, chickpeas

Combine ingredients and bake covered at 425 for 30 minutes

Remove from oven and add spinach, Parmesan, and cream. Bake 5 more minutes.
