I suddenly gained some weight after eating poorly for some time. I wanted start eating healthier again and thought up this recipe.

The beta-carotene in carrots becomes easier to absorb when you combine it with oil. Plus, oil makes the carrot really taste great! It gets rid of the raw-carrot taste.

Ingredients

  1. 1 mediumCarrot
  2. 2pieces Ginger
  3. 1/4 tspSalt
  4. For the dressing:
  5. 2 tbspHoney
  6. 1 tbspLemon juice
  7. 1 tbspOlive oil

Cooking Instructions

    Finely shred the carrot and ginger.

    Sprinkle with salt and mix lightly. Leave for 5 minutes until it wilts a little. This step brings out the sweetness of the carrot and is very important in making this salad really delicious!

    Combine the dressing ingredients, mix together, cover with plastic wrap and microwave for 1 minute. Leave for an additional 5 minutes in the micowave.

    Add some raisins for sweetness!

    Add some walnuts for their anti-aging qualities! For better texture, leave whole nuts uncrushed.
