Ingredients

4 servings
  1. 2Carrots (preferably organic)
  2. 1 tbspOlive oil (preferably extra virgin)
  3. 1 tbspWhite wine vinegar (or your choice of vinegar)
  4. 1 tspMaple syrup
  5. 1Salt and pepper
  6. 1Oregano
  7. 1 pinchCumin
  8. 1 dashParsley (dry or fresh)

Cooking Instructions

    Rough chop the carrots and boil until tender. Prepare the marinade.

  2. 2

    Place the boiled carrots in the marinade, mix well, then they're ready to serve.

  3. 3

    This recipe also works well with thinly sliced carrots.
