Easy Niratama (Chinese Chives Omelette)

This has been one of my go-to recipes since I started cooking. I've revised it over the years to make it easier and tastier, and this recipe is the result.
When cooking the egg at Step 3, I put all the egg mixture in at once because I'm lazy, but it's easy to mess up when flipping the omelette over, so you can make individual sized omelettes that are easier to flip over instead. For about 4 servings. Recipe by Plus Nine
Easy Niratama (Chinese Chives Omelette)

Cooking Instructions

Cut up the pork and chives into easy to eat pieces. Thinly slice the onion. Beat the eggs in a large bowl.

Stir fry the pork in a frying pan and season with salt and pepper. Add the onion and stir fry for another 2 minutes or so, then add the chives, bean sprouts and soup stock granules.

Stir-fry until the bean sprouts are wilted and turn off the heat. Let it cool down a bit, then add to the egg in the bowl and mix well.

Wipe out the frying pan with paper towels, spread around a little oil, pour in the egg mixture and cook on both sides. (See Hints.)

Cut into wedges and eat with ketchup to taste.

Add carrots, mushrooms or whatever vegetables you have on hand into the egg mixture.

I wanted to use up a bit of the huge shipment of Chinese cabbage that I was gifted.At first I was using it in stew, then I made mapo-style Chinese cabbage, and then I decided on something similar to okonomiyaki!It's better to use fresh cabbage in the omelette, rather than stir-frying it beforehand. This will give you a crunchier texture.Originally I thought that it would be better to stir-fry the cabbage first to prevent any excess moisture, but actually it had the opposite effect and I ended up with a messy omelette. I love natto and cream cheese together. So, I tried folding them inside some soft eggs to make an omelette. The resulting dish was delicious as it was mildly flavored overall thanks to the eggs.I think you only need the saltiness of the natto sauce, Japanese mustard, and the cream cheese to season the omelette. For best results, use a decent amount of green onions and bonito flakes. Try making an omelette with your usual frying pan a few times to get the hang of it.
