Lamb & Vegetable Stir-fry Rice Bowl

This might be a new way to eat Lamb for you. It is a very simple stir-fry dish. As I always eat it with Rice, I made it into a rice bowl. This stir-fry is absolutely easy. Make the marinade in a mixing bowl, add all ingredients and mix to combine, then stir-fry. Of course, Lamb can be replaced with other meat.

Ingredients

10 minutes plus marinating time
2 Servings
  • 200-250 gthinly sliced Lamb *cut into bite-size pieces
  • 1/2Onion *thinly sliced
  • 1small Carrot *cut into thin strips
  • 1medium King Oyster Mushroom *sliced
  • *Note: You can use other Asian Mushrooms, e.g. Shiitake
  • Finely chopped Spring Onion
  • Toasted Sesame Seeds
  • Marinade
  • 1 cloveGarlic *grated
  • 1small piece Ginger *grated
  • 1 tablespoonSugar
  • 2 tablespoonsSoy Sauce
  • 1/2 tablespoonSesame Oil
  • Chilli Flakes, Chilli Paste, etc. *optional, as required

Steps

10 minutes plus marinating time
  1. 1

    Combine all the Marinade ingredients in a mixing bowl.

  2. 2

    Add Lamb and Vegetables to the Marinade, and mix to combine. Set aside for 10 to 15 minutes.

  3. 3

    Heat a frying pan or wok over high heat, add everything in the mixing bowl to the pan, and stir-fry until everything is cooked.

  4. 4

    Half fill a bowl with warm Cooked Rice and cover it with the mixture. Sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.
