Since my son loves karaage, and I'm a big fan of sweet and sour pork, this was a compromise that became our family's go-to dish.
I played around with the seasoning. Sometime I'll get around to making a regular recipe.

My son hates vegetables and will eat the karaage up before they're seasoned, so I flavor the chicken for a thicker taste.
You can make this if you have any leftover chicken karaage. When adding the sweet vinegar sauce, mix well since the katakuriko tends to settle at the bottom of the bowl. For 3 servings. Recipe by chaccoco

Ingredients

3 servings
  1. 200 gramsChicken thigh meat
  2. For the marinade:
  3. 1 tbspSake
  4. 1/2 tspGinger (grated)
  5. 1/2 tspGarlic (grated)
  6. 2/3 tbspSoy sauce
  7. 1Salt and pepper
  8. 1Katakuriko
  9. 1/3Carrot
  10. 1/2Onion
  11. 3Shitake mushrooms
  12. 50 gramsBamboo shoot (cooked and preserved in water)
  13. 2Green peppers
  14. 1Oil for cooking, frying
  15. For the sweet vinegar sauce:
  16. 3 tbspSugar
  17. 3 tbspRice vinegar
  18. 1 tbspSoy sauce
  19. 1 tbspOyster sauce
  20. 1 tbspSake
  21. 1/2 tspChinese chicken stock powder
  22. 100 mlWater
  23. 1 tbspKatakuriko

Cooking Instructions

    Combine all of the ingredients for the sweet vinegar sauce.

    Add the sweet vinegar sauce. Mix well before marinating, since the katakuriko will settle. Mix everything together well.

    While marinating, cook the vegetables, starting with the root vegetables.

    Once the vegetables have cooked, add the fried chicken.

    Add the sweet vinegar sauce, mixing well before adding. Mix everything together well.

    It's ready to serve.
