Recipe passed to me from a friend. Think she got it from Holy Vegan Cow website. Again, it's very straight forward and makes loads so you have spare to freeze and use throughout the month. Make sure you use the biggest saucepan you have!

Ingredients

  • 1onion
  • 20 podsokra, slice lengthways
  • 5mini aubergines, cubed
  • 2tblsp grated ginger
  • 2green chilli
  • 1large sweet potato, cubed
  • 2tomatoes, pureed
  • 2tblsp tomato puree
  • .75 cupsmooth peanut butter
  • .5 cuppeanuts
  • 5 cupsveg stock
  • 1 tsppaprika
  • 1 tspfenugreek
  • 1tblsp coriander
  • 1 tspcumin
  • to tasteHarrissa paste

Steps

  1. 1

    Sauté onion in a very large pan in a splash of oil over medium heat

  2. 2

    Add spices, chilli and tomato puree and stir until purée is nearly dry

  3. 3

    Add tomatoes, peanut butter and stock and stir

  4. 4

    Add veg and peanuts and bring to the boil. Turn heat down and simmer for 30-mins

  5. 5

    Stir in harissa paste a little at a time until you have the heat/spice you like

  6. 6

    Serve with cous cous, quinoa or rice
