Steps

Dry roast fennel seeds, Fenugreek seeds, cumin seeds, mustard seeds, coriander seeds and fennel seeds for few seconds on medium flame. Dry grind coarsely. Keep aside.

Wash and dry gooseberries. Grate coarsely. Put in a ceramic/glass bowl. Add vinegar and mix well. Leave for 10 minutes.

After 10 minutes, add ground spices, salt and powdered spices. Mix very well.

Meanwhile heat mustard oil to smoking point. Remove frome stove and pour carefully on gooseberry. Cover and leave 1 hour.

Instant amla achar/pickle is ready to be served. Serve with roti /pooris Or parathas.

For better result you may consume after 3 days.
