Ingredients

  3. 2 cupsmilk (about 500 ml)
  4. 1/4 cupmelted butter (cooled) (about 50 grams)
  5. 1 pinchsalt
  6. 1little oil or butter for cooking
  7. For sweet crepes, add:

  9. 1 tablespoonvanilla extract or rum, orange blossom water

    Gradually pour in the milk while whisking to get a smooth, lump-free mixture. (I highly recommend straining the mixture through a sieve to remove any lumps).

    Add the cooled melted butter, mix, and let rest for 30 minutes to 1 hour at room temperature or in the fridge. (This step is essential to get a thick and supple batter that spreads correctly and results in soft crepes).

    Lightly butter a crepe pan or non-stick skillet and heat over medium heat.

    Pour a small ladle of batter into the center of the pan and quickly swirl it around to spread the batter thinly over the entire surface.
