Cooking Instructions

Pour the sifted flour into a bowl and mix with the salt (and sugar if making sweet crepes). Make a well in the center and pour in the lightly beaten eggs.

Gradually pour in the milk while whisking to get a smooth, lump-free mixture. (I highly recommend straining the mixture through a sieve to remove any lumps).

Add the cooled melted butter, mix, and let rest for 30 minutes to 1 hour at room temperature or in the fridge. (This step is essential to get a thick and supple batter that spreads correctly and results in soft crepes).

Lightly butter a crepe pan or non-stick skillet and heat over medium heat.

Pour a small ladle of batter into the center of the pan and quickly swirl it around to spread the batter thinly over the entire surface.

Cook until the edges start to lift.

Flip the crepe with a spatula and cook on the other side for a few moments until the crepe is lightly golden (Be careful not to burn the crepe, it cooks quickly).

Slide the crepe onto a plate and repeat the process until all the batter is used up.
