In a large pot, bring the vegetable or mushroom broth to a simmer over medium heat.

While the broth is heating, cook the noodles according to the package instructions. Once cooked, drain and set aside.

Add the sliced shiitake mushrooms, minced garlic, grated ginger, and julienned carrots to the simmering broth. Let it cook for about 5-7 minutes until the mushrooms are tender.

In a small bowl, mix the miso paste with a few tablespoons of hot broth until smooth. Then add the miso mixture back into the pot.

Stir in the soy sauce or tamari and sesame oil.
Add the cooked noodles to the pot and stir to combine. - 6

Serve the Miso Shiitake noodle soup hot, garnished with sliced green onions.
