Name: Easy Homemade Tsukemen (Dipping Ramen)
Yield: Serves about 3 servings
Ingredients: 3 packs Chinese-style ramen noodles; 3.5 oz pork belly (about 100 grams); 1 stalk green onion; 2 cups water (about 480 ml); 1 cup concentrated noodle soup base (3x strength) (about 240 ml); 1 tablespoon vinegar (15 ml); 1 tablespoon toasted sesame oil (15 ml); 1 teaspoon chili oil (5 ml); 1 teaspoon shichimi togarashi (Japanese seven spice) (5 ml); Green onion, thinly sliced, to taste (optional, for garnish); White sesame seeds, to taste (optional, for garnish)

Tsukemen, a popular dish at many restaurants, can be easily made at home with this spicy dipping sauce. My husband always finishes two servings!
Recipe background: I adapted a recipe I found in a magazine to make it simpler and spicier to suit my taste.

Serves about 3 servings

3 packsChinese-style ramen noodles
For the dipping sauce:
3.5 ozpork belly (about 100 grams)
1 stalkgreen onion
2 cupswater (about 480 ml)

1 tablespoontoasted sesame oil (15 ml)
1 teaspoonchili oil (5 ml)

Steps

Slice the green onion diagonally into 1/8-inch (2–3 mm) pieces. Cut the pork belly into 1-inch (2–3 cm) strips.

Heat a little vegetable oil (not listed in ingredients) in a pot. Sauté the green onion and pork belly until the pork changes color. Add the water and bring to a boil.

Once boiling, skim off any foam, then add the noodle soup base.

When it comes back to a boil, add the vinegar, sesame oil, chili oil, and shichimi togarashi to finish the dipping sauce.

Cook the noodles according to package instructions. Serve the noodles either warm or chilled, and dip them into the hot dipping sauce to enjoy!

This sauce also goes well with udon noodles—I tried it and it was just as delicious as with ramen.

As of April 4, I also enjoyed this with somen noodles!
