Ingredients

Serves 4 servings
  1. 400 gramssushi rice
  2. 6eggs
  3. 1 pinchsalt
  4. 2 tablespoonseach potato starch and water
  5. 4shiso leaves
  6. 1/4 bunchmizuna
  7. 2myoga
  8. 20 gramsdried baby sardines
  9. 1/2 tablespoonsake
  10. 1 tablespoonwhite sesame seeds
  11. Optional: salted cherry blossoms or kinome leaves for garnish

Steps

    Make thin omelets. Beat the eggs well, then add salt and a mixture of potato starch and water.
    Optionally, strain through a cloth or sieve. Cook in a lightly oiled (oil not included in ingredients) frying pan. You should get about 8 pieces.

    Cut the shiso into thin strips. Chop the mizuna finely, sprinkle with salt, and squeeze out the moisture. Blanch the myoga briefly and marinate in sweet vinegar (not included in ingredients), then slice thinly. (You can skip this step and slice raw myoga instead.) Dry roast the dried baby sardines with sake (optional).

    Mix the sushi rice with the ingredients from step 2 and white sesame seeds, breaking them up evenly. Divide into 8 portions and shape gently into oval mounds. Wrap with the omelets from step 1 and add garnish to finish.

    After cooking the thin omelets, place them between sheets of kitchen paper to prevent sticking and absorb excess oil.
