Ingredients

Serves 4 servings
  1. 4eggs
  2. 2 tablespoonssoy sauce (30 ml)
  3. 2 tablespoonsmentsuyu (30 ml)
  4. 2 tablespoonsmirin (30 ml)
  5. 2 cupswater (480 ml)
  6. Garlic chips, to taste

Steps

    Bring the eggs to room temperature (this is essential!).

  2. 2

    Place the room-temperature eggs into boiling water. Boil for 5 minutes and 20 seconds, then transfer immediately to ice water.

  3. 3

    Peel the eggs in the water (since they're very soft, peeling in water helps prevent breaking). Mix the marinade ingredients together and soak the eggs for 1–2 days.
