Ingredients

  1. 1/2-1burdock root
  2. Enough oil for frying
  3. Salt to taste
  4. 1 pinchaonori (dried seaweed flakes)
  5. Potato starch, optional

Cooking Instructions

  1. 1

Use the back of a knife to scrape the skin off the burdock root, cut it to your desired length, and use a peeler to slice it thinly.

  2. 2

Soak the sliced burdock in vinegar water for a while to remove bitterness, then drain in a colander.

  3. 3

If you like them crispy, proceed to step 4. If you prefer them crunchy, coat with potato starch here.

  4. 4

Fry in oil at 340°F (170°C). Sprinkle with salt while hot, serve, and add a small amount of aonori.
