Cut the chikuwa open lengthwise with scissors, but don't cut all the way through. Just open it up.

Place the potato salad on the opened chikuwa. A little mound is perfect.

Coat with the prepared tempura batter. Use a shallow container like a tray or plate to roll it around for easy coating.

Now just fry it! A frying pan is sufficient. Roll it around while frying.

Once done, cut into bite-sized pieces and enjoy!
