Boil the eggs in water for about 11 minutes, then immediately cool them in water and peel. Once cooled, cut them in half. - 2
Finely chop the pickles and shallots, sprinkle with sugar and lemon juice, cover with plastic wrap, and microwave for about 20 seconds. Let cool with the juices.

Scoop out the egg yolks with a spoon and place them in a bowl with the cooled mixture (including the juices from the vegetables). Keep the egg whites intact to use as cups.

Add mayonnaise to the yolk mixture, mix well, and season with salt and pepper to taste (this completes the egg cream).

Generously fill the reserved egg whites with the yolk mixture, chill in the refrigerator. Just before serving, top with parsley or paprika, and enjoy!

For a half dozen eggs (dozen halves), I use about 3 tspns, just enough to bind the filling.
