This is a very easy soup where the flavors of Japanese and Western broths mix with the ingredients. Enjoy it with a variety of vegetables. The origin of this recipe: I often made this soup when I lived alone. Just using consommé felt lacking, so one day I added Japanese dashi... and it was surprisingly delicious! Since then, this method has become my go-to.

Ingredients

Serves 3-4 servings
  1. 1 1/2 inchescarrot
  2. 1/2large onion
  3. 1potato
  4. 4-5sausages
  5. Your choice of vegetables, as desired
  6. 2 1/3-2 1/2 cupswater (or broth)
  7. 1 cubeconsommé
  8. 1 packet(4-5g) Japanese dashi powder (omit if using broth)
  9. Salt and pepper, to taste

Cooking Instructions

  1. 1

Cut the vegetables and sausages into about 1/2-inch cubes. I also added some leftover cabbage this time.

  2. 2

Put the chopped vegetables and sausages in a pot, add water, and bring to a boil. Add the sausages from the start to infuse their flavor into the broth.

  3. 3

Skim off any foam, and once the vegetables are somewhat cooked, add the dashi powder (omit if using broth) and consommé. Let it simmer for a while.

  4. 4

Once the root vegetables are tender, season with salt and pepper to taste, serve in bowls, and it's done! Garnish with parsley or sprinkle with black pepper for extra flavor.

Published in the January 27, 2015 edition of the recipe book 'Everyone's Onigirazu'. It was featured as a soup that pairs well with onigirazu!

Letting it sit for a bit after cooking enhances the flavor. If it tastes sharp, give it a try!
