This is the consomme soup my mother used to make. She cooked with bacon and spring cabbage.

When I have leftover cabbage, or when I forget about my stock and it wilts, I often make this soup.

Ingredients

4 servings
  • 200 gramsCabbage
  • 1/2Carrot
  • 2Potatoes
  • 6Wiener sausages
  • 700 mlWater
  • 2Consomme soup stock cubes
  • 1 dashSalt and pepper

Steps

  1. 1

    Cut the potatoes, carrot, and wiener sausages into bite-sized pieces.

    Roughly chop the cabbage. (I shredded it so that it's easy to eat for my kids this time.)

    Stir-fry the wiener sausages in a pot. When the oil renders from the sausages, add carrot and continue stir-frying.

    Pour in water. When it starts to boil, skim off the scum, and add the cabbage and consomme.

    Add potatoes, and sprinkle with salt and pepper. Cover with a lid, and simmer until the potatoes become soft.

    Finally, taste the soup. If it's too thin, add a little bit of salt and pepper, and it's done.
