Place the panko breadcrumbs in a bag and crush them with a rolling pin until they are evenly fine. Peel one potato and grate it.

In a bowl, combine the flour, grated potato, egg, and water. Mix well, then let the batter rest in the refrigerator for about 10 minutes.

Cut the potatoes, king oyster mushroom, and chicken thigh into rectangular pieces that are easy to skewer. Thread them onto the bamboo skewers.

Dip the skewered ingredients into the batter, then coat with panko breadcrumbs. Fry in hot oil until golden brown. Serve with kushikatsu sauce.
