Ingredients

  • 2 lbred potatoes; medium dice
  • 6 slicescooked bacon; small dice
  • 1/3 Cgiardenera relish
  • 1/4 Cdijon mustard
  • 1/2 Ccountry whole grain mustard
  • 1 Twhite wine vinegar
  • 1 headgarlic; roasted
  • as neededkosher salt & black pepper

Steps

  1. 1

    Cover potatoes with cold, salted water. Bring to a boil. Cook until potatoes are easily pierced with a paring knife.

    Combine relish, dijon, country mustard, vinegar, and roasted garlic. Add a pinch of salt and pepper. Whisk together.

    Fold potatoes and bacon into mustard mixture.
