I made this using the ingredients I had in the refrigerator before payday. My family surprisingly loved it, so I uploaded the recipe!

If you don't like ginger, reduce the amount to 1 small thumbtip-sized piece, or even leave it out entirely. Please adjust the cooking heat depending on your gas or IH cooktop. For 2 to 3 servings. Recipe by hanaari

Ingredients

3 servings
  1. 250 gramsGround meat (pork and beef combination, pork, chicken - anything works)
  2. 2pieces Ginger
  3. 1 stalkJapanese leek
  4. 1/2Onion
  5. 1/2 mediumCarrot
  6. 1as much (to taste) Plain cooked rice (rice with barley if possible)
  7. .
  8. 3 tbspSoy sauce
  9. 3 1/2 tbspMirin
  10. 2 tbspSake
  11. 200to 230 ml Water
  12. 1to 1 1/2 tablespoons Sesame oil (for frying)
  13. 1 stalkGreen onion (for garnish)
  14. 1 tbspkatakuriko + 2 tablespoons water Katakuriko slurry

Steps

  1. 1

    Chop the ginger, leek, carrot and onion finely. Chop the green onion finely also (into thin rounds). Put the chopped ginger and leek together.

    Heat the sesame oil in a pan over low heat, add the ginger and leek and slowly stir fry until it's fragrant. Take care not to burn it!

    When it's softened, add the carrot and onion, turn the heat up to medium, and stir fry until softened.

    Add the ground meat to the pot, turn the heat up a bit to medium-high, and stir fry until cooked through.

    Add water to the pot and bring to a boil, then add the soy sauce, mirin and sake and bring to a boil again.

    Turn the heat down a bit and add the katakuriko dissolved in water little by little to thicken the sauce.

    Put rice in serving bowls or plates, spoon the meat sauce over it, sprinkle on the chopped green onion and it's done!
