5 Minute Side Dish! Shiitake and Blue Cheese

I made a side dish with what I had in my fridge.
People often request this dish, and I make it for parties or as a wine snack.
They will taste best if you bake them until the cheese has just started to brown.
If you use large shiitake, they'll have a juicy and tasty finish.

Remove the roots, then wipe the shiitake clean.

Turn the shiitake over, and stuff them with blue cheese. Use a lot of cheese, but not so much that it spills out when melted.

Bake for 3 minutes in a fish grill, and they're done! See, I told you they were easy!

You can top the cheese with a little panko for a crispy finish.

I always have a stock of this blue cheese. It's already sliced thinly, so it's easy to use.
