In a small bowl, mix together the sugar, soy sauce, mirin, sake, and grated ginger. Shred the lettuce and cut the tomato into 1/2-inch (1 cm) cubes.

Cut the chicken into bite-sized pieces. Sprinkle with 1 teaspoon sake and rub in. Season with salt and pepper, then lightly coat with flour.

Heat the vegetable oil in a skillet over medium heat. Add the chicken and cook until golden brown on both sides. Reduce the heat to low, cover, and cook through.

Once the chicken is cooked, remove any excess oil from the pan. Add the prepared sauce and simmer until it thickens into a glaze.

To serve, place cooked rice in a bowl. Top with lettuce, tomato, and chicken, then drizzle with the sauce.

Finish with mayonnaise and a sprinkle of white sesame seeds.
