Ingredients

Serves 3–4 servings
  • 1 tablespoon(about 15 grams) garlic, minced
  • 1 tablespoon(about 15 grams) fresh ginger, minced
  • 1 cup(about 100 grams) onion, thinly sliced (or use diagonally sliced green onion)
  • 3–4 shiitake mushrooms, thinly sliced (or substitute with other mushrooms, or omit)
  • 3–4 stalks garlic chives, cut into 1-inch (2–3 cm) pieces (or substitute with green onions, or omit)
  • 3.5 ounces(about 100 grams) ground pork (optional)
  • 1 tablespoontoasted sesame oil
  • 2 teaspoonsdoubanjiang (spicy chili bean paste)
  • 1/4 cup(about 60 grams) miso paste (I used awase miso)
  • 2 teaspoonssoy sauce
  • 3 tablespoonsground white sesame seeds
  • 3 cupswater (about 710 ml)

Steps

  1. 1

    Heat the sesame oil in a pot or skillet. Add the minced garlic, ginger, and onion, and sauté.

  2. 2

    When fragrant, add the ground pork and doubanjiang. Break up the meat as it cooks.

  3. 3

    Once the meat changes color, add the shiitake mushrooms and water. Bring to a boil. If using green onions, add them now.

  4. 4

    Add the miso, ground sesame seeds, and soy sauce. Bring to a gentle boil, then add the garlic chives. When the chives are wilted, it's ready.
