You can make super tasty soft-boiled marinated eggs (like ramen eggs) at home! They’re especially good on the second day. Recipe background: I used to have a lot of leftover marinade after soaking the eggs, which felt wasteful. I found a way to use less marinade and still get great flavor!

You can make super tasty soft-boiled marinated eggs (like ramen eggs) at home! They’re especially good on the second day. Recipe background: I used to have a lot of leftover marinade after soaking the eggs, which felt wasteful. I found a way to use less marinade and still get great flavor!

Prep: Bring the eggs to room temperature.

Add all the marinade ingredients (marked with ★) to a pot, bring to a boil, then let cool.

Fill a pot with enough water to cover the eggs and bring to a boil. Gently add the eggs and boil for 6 1/2 to 7 minutes.

Immediately transfer the boiled eggs to ice water. Peel the eggs, then soak them in the cooled marinade for 1–2 days.

Tip: Since there isn’t much marinade, use a small storage bag and support it in a small bowl so the eggs are fully submerged.
