Ingredients

  1. 2–3 eggs (medium to large)
  2. Marinade
  3. 1/3 cupwater (80 ml)
  4. To taste dashi powder
  5. 2 tablespoonssoy sauce (regular)
  6. 1 tablespoonsake
  7. 2 tablespoonsmirin
  8. 1 1/2 teaspoonssugar
  9. About 1 1/4-inch (3 cm) garlic paste

Steps

    Prep: Bring the eggs to room temperature.

  2. 2

    Add all the marinade ingredients (marked with ★) to a pot, bring to a boil, then let cool.

  3. 3

    Fill a pot with enough water to cover the eggs and bring to a boil. Gently add the eggs and boil for 6 1/2 to 7 minutes.

  4. 4

    Immediately transfer the boiled eggs to ice water. Peel the eggs, then soak them in the cooled marinade for 1–2 days.

  5. 5

    Tip: Since there isn’t much marinade, use a small storage bag and support it in a small bowl so the eggs are fully submerged.
