Make a simple zenzai (sweet red bean soup) using canned sweetened azuki beans and mochi. You only need one skillet for this recipe. It's a delicious way to enjoy mochi from Kagami Biraki or use up leftover mochi from New Year's.

  • 1 can(7.4 oz/210g) sweetened azuki beans
  • 2 piecesmochi (about 2 oz/56g each)
  • 3/4 cupwater (200 ml)
  • 1/6 teaspoonsalt

Steps

    I used a 7.4 oz (210g) can of sweetened azuki beans, but you can use your favorite brand.

    Add the water, salt, azuki beans, and mochi to a skillet. Heat until it comes to a boil, then simmer over medium heat for 5 minutes, or until the mochi is soft.

    Pour into bowls and serve.
