Edamame Tofu & Hanpen Patties

Featured recipe! Just mix and pan-fry—enjoy a fluffy texture with the aroma of green onions and the bite of edamame. This is a great dish for appetizers or lunchboxes! Recipe origin: I combined leftovers from my fridge and ended up with something like a fish cake that tasted even better than I expected!

Steps
- 1
Drain the tofu. Wrap it in paper towels and microwave at 500W for 2 minutes. Place a weight on top and let it cool to room temperature.
- 2
Once cooled, mash the tofu. Tear the hanpen into pieces and add it, then mash until easy to mix.
- 3
Add potato starch, salt, black pepper, and soy sauce. Mix well, then add the boiled edamame and sliced green onion.
- 4
Heat sesame oil in a skillet. Divide the mixture into 8 portions, shape into patties, and cook. Brown both sides until golden and cooked through.
