Cooking Instructions

Drain the tofu. Wrap it in paper towels and microwave at 500W for 2 minutes. Place a weight on top and let it cool to room temperature.

Once cooled, mash the tofu. Tear the hanpen into pieces and add it, then mash until easy to mix.

Add potato starch, salt, black pepper, and soy sauce. Mix well, then add the boiled edamame and sliced green onion.

Heat sesame oil in a skillet. Divide the mixture into 8 portions, shape into patties, and cook. Brown both sides until golden and cooked through.
