Ingredients

  • Chicken breast - 1 per person being served (you can also use skinless chicken thighs)
  • 1large onion very finely chopped
  • 1red pepper / capsicum finely chopped
  • 1 handfulmushrooms sliced - not essential
  • 2 clovesgarlic crushed and finely chopped
  • 1chicken stock cube - any brand will work
  • Freshly ground pepper to taste - would not suggest using white ground pepper
  • 1 tablespoondried mixed herbs
  • Small tub of double cream (although Crème Fraiche may also work but hasn't been tried and tested)
  • 1/3of a bottle of white wine - would suggest Chardonnay or New Zealand Sauvignon Blanc
  • 0.5of a teaspoon of sugar
  • New baby potatoes or long grain rice - enough for the number of people that you are serving
  • Carrots - enough for the number of people that you are serving
  • Fine green beans or broccoli - enough for the number of people that you are serving
  • Small amount of butter to glaze vegetables

Steps

  1. 1

    Pre heat your oven to 190 degrees Celsius (375 Fahrenheit / gas mark 5).

  2. 2

    Start to steam or boil your choice of accompanying vegetables.

  3. 3

    Scatter all finely chopped ingredients together across the bottom of a baking tray or oven proof dish and place the chicken breast or chicken thighs on the top.

  4. 4

    Sprinkle the chicken stock cube, herbs and freshly ground pepper over the chicken.

  5. 5

    Pour the wine over all of the ingredients and cover loosely with tin foil (to retain the moisture as it cooks). Cook for aprox 30 minutes.

  6. 6

    Remove from the oven and set aside the chicken meat into an alternative dish. Place the remainder of the ingredients on an electric or gas hob, add a splash more wine and bring to the boil until the alcohol has been reduced but has left a small amount if liquid and then add the double cream.

  7. 7

    Bring back to the boil and add the chicken meat back into the sauce. Add in the small amount of sugar and stir. Taste and adjust seasoning if necessary. Yum yum...!

  8. 8

    Toss your cooked accompanying vegetables in butter and plate in readiness for the meat and sauce.

  9. 9

    Remove the chicken once again from the sauce and slice diagonally prior to displaying beautifully on each plate. Spoon the sauce across the sliced chicken breast and and prepare to be in food heaven...! Enjoy!
