Created by me from scratch, this recipe is an all out favourite of my friends and family and they ask me to make it every time they visit or come to stay. I love the rich taste and ease of making and hope that you will enjoy and share this recipe too!

Pre heat your oven to 190 degrees Celsius (375 Fahrenheit / gas mark 5).

Start to steam or boil your choice of accompanying vegetables.

Scatter all finely chopped ingredients together across the bottom of a baking tray or oven proof dish and place the chicken breast or chicken thighs on the top.

Sprinkle the chicken stock cube, herbs and freshly ground pepper over the chicken.

Pour the wine over all of the ingredients and cover loosely with tin foil (to retain the moisture as it cooks). Cook for aprox 30 minutes.

Remove from the oven and set aside the chicken meat into an alternative dish. Place the remainder of the ingredients on an electric or gas hob, add a splash more wine and bring to the boil until the alcohol has been reduced but has left a small amount if liquid and then add the double cream.

Bring back to the boil and add the chicken meat back into the sauce. Add in the small amount of sugar and stir. Taste and adjust seasoning if necessary. Yum yum...!

Toss your cooked accompanying vegetables in butter and plate in readiness for the meat and sauce.

Remove the chicken once again from the sauce and slice diagonally prior to displaying beautifully on each plate. Spoon the sauce across the sliced chicken breast and and prepare to be in food heaven...! Enjoy!
