In a bowl, mix the cold water and mayonnaise together.

Add the flour, being careful not to overmix, and stir gently until just combined. Don’t worry if there are a few lumps.

Lightly coat your tempura ingredients with extra flour (not included in the main ingredients), then dip them in the batter and fry over high heat until crispy.
