Prepare the chicken as needed. Cut the chicken thigh into bite-sized pieces and sprinkle with a little sake (optional: season with salt and pepper). Cut the green onion into 1 1/2-inch (4 cm) pieces.

Mix all the ● sauce ingredients together in a small bowl.

Heat a little oil in a skillet. Add the chicken and green onion, and cook over medium heat until browned. (Tip: Let them sear without moving too much for a nice char.)

Wipe excess oil from the pan with a paper towel. Add the prepared sauce, cover, and steam-cook until the chicken is cooked through.

When the sauce has mostly evaporated, it's ready! Serve on a plate and enjoy.
