Cooking Instructions

[Prepare the Noodles] Cook the udon or soba noodles according to the package instructions. (While the noodles are cooking, prepare the pork dipping sauce.)

For the fried tofu, blanch it in boiling water (or pour hot water over it) to remove excess oil for better flavor absorption.

[Cut the Ingredients] Cut the pork belly and green onion into bite-sized pieces, and remove the base of the shimeji mushrooms. Slice the fried tofu into 1 cm strips.

[Stir-Fry] Heat sesame oil in a frying pan and sauté the grated garlic. *Be careful as tube garlic can splatter!

Once the garlic is fragrant, stir-fry the pork belly over medium heat. When it starts to cook, add the shimeji mushrooms and green onion and continue to stir-fry.

[Simmer] Once the shimeji mushrooms are cooked, add the ★ingredients, fried tofu, pepper, and ginger. Simmer over medium heat until it boils, then it's ready! Serve the udon or soba in bowls.

[Topping] After serving the pork dipping sauce in a bowl, optionally add tempura bits, ground sesame seeds, or yuzu powder for extra flavor.
