Serves 2–3 servings
  1. Desired amount of udon or soba noodles
  2. 5.3 oz (150 g)sliced pork belly
  3. 1/2 bunchshimeji mushrooms
  4. 1 stalkgreen onion
  5. 1 piecefried tofu (if available)
  6. To taste ichimi or shichimi pepper
  7. 1–2 cm grated garlic (tube is fine)
  8. Desired amount of grated ginger (tube is fine)
  9. 1 teaspoonsesame oil
  10. 1 2/3 cups (400 ml)★water
  11. 2/3 cup (150 ml)★noodle soup base (straight or double-concentrated)

Cooking Instructions

  1. 1

[Prepare the Noodles] Cook the udon or soba noodles according to the package instructions. (While the noodles are cooking, prepare the pork dipping sauce.)

  2. 2

For the fried tofu, blanch it in boiling water (or pour hot water over it) to remove excess oil for better flavor absorption.

  3. 3

[Cut the Ingredients] Cut the pork belly and green onion into bite-sized pieces, and remove the base of the shimeji mushrooms. Slice the fried tofu into 1 cm strips.

  4. 4

[Stir-Fry] Heat sesame oil in a frying pan and sauté the grated garlic. *Be careful as tube garlic can splatter!

  5. 5

Once the garlic is fragrant, stir-fry the pork belly over medium heat. When it starts to cook, add the shimeji mushrooms and green onion and continue to stir-fry.

  6. 6

[Simmer] Once the shimeji mushrooms are cooked, add the ★ingredients, fried tofu, pepper, and ginger. Simmer over medium heat until it boils, then it's ready! Serve the udon or soba in bowls.

  7. 7

[Topping] After serving the pork dipping sauce in a bowl, optionally add tempura bits, ground sesame seeds, or yuzu powder for extra flavor.
