Combine all the dipping sauce base ingredients (marked with ⬛) in a bowl.

Pour the water into a pot and bring to a boil.

While the water is heating, cut the green onion, pork belly, and fried tofu into bite-sized pieces as desired.

Once the water boils, add the sliced pork belly and separate the pieces as they cook.

When the pork is cooked through, remove it from the pot and set aside to prevent it from getting tough.
(Do not discard the cooking water; keep it in the pot!) - 6
To the same pot with the cooking water, add the prepared sauce base, green onion, and fried tofu. Bring to a simmer.

Once it starts bubbling, taste and adjust the seasoning. If it's too salty, add more water. The saltiness may vary depending on your miso, oyster sauce, and mentsuyu.

Drizzle in the sesame oil to finish. Your dipping sauce is ready!

Serve the cooked pork belly and sauce in a bowl.
Add ground sesame seeds, chili pepper, chili oil, black pepper, or vinegar to taste, if you like. - 10
Enjoy by dipping thick ramen noodles or udon into the sauce!

If you're preparing ahead for someone eating later, have everything ready up to this point.
When ready to eat, just reheat the sauce and cook the noodles.
