Serves 2 servings

2boneless, skin-on chicken thighs
Salt and pepper, to taste
2 clovesgarlic
1 tablespoonsake (for steaming) (15 ml)
3 tablespoonssoy sauce (45 ml)

Open up the chicken thighs, trim excess fat and tendons, and poke holes on both sides with a fork. Season with salt and pepper, then coat with potato starch (or cornstarch). Lightly crush the garlic cloves.

Add oil and garlic to a skillet, then add the chicken.

Pour in the sake, cover with a lid, and steam-cook over low heat.

In a bowl, mix together the soy sauce, sugar, mirin, and sake.

Flip the chicken over. To prevent the garlic from burning, place it on top of the chicken.

Flip the chicken again, increase the heat slightly, then add the sauce mixture. Simmer until the sauce thickens slightly.

Cut the chicken into bite-sized pieces and serve on a plate.

Slice the chicken and use it as a pizza topping—it's delicious!
