An ideal method to enjoy carnitas in: gorditas, huaraches, tacos, tortas, etc.

In a pot, cook the meat with water, bay leaves, 1/2 onion, 1 clove of garlic, and a handful of salt. (You can also add 2 cloves)

Cook over medium heat for about 45 minutes, until the meat is very tender.

Remove the meat from the water (do not discard the water where the meat was cooked) - if the meat is in a chunk, cut it into pieces, if it was already in pieces, then don't. Haha

In a deep skillet over medium heat, add a tablespoon of pork lard until it melts completely.

Add the meat (already chopped) to the skillet and fry until it is very golden brown.

Remove the tomatoes from the water and blend them with 1/2 onion, the chiles, and 1 clove of garlic. Add a cup of the leftover water from the meat (this way you don't need to add salt or just a little).

Mix the sauce with the meat (OPTIONAL: you can add some deflamed onion at this point) when it starts to boil, turn off the heat, add a little chopped cilantro, cover the skillet, and let it rest for about 10 to 15 minutes.
